Ingredients
- 6 Skinless Boneless Chicken Breastcan use organic or regular (best if fat trimmed)
- 2 Eggs
- 2tsps. Pepper
- 2cups Italian Breadcrumbs
- 1/2cup Olive oil
- 1/2cup Butter (1 stick)
- 1large Eggplantsliced as whole big pieces
- 1 1/2cups Colonna Parmesan Cheesefresh Italian grated parmesan cheese (divided)
- 124 oz. jar Botticelli Italian Sauce (divided)
- 1lb. Italian Biazzo Shredded Mozzarella Cheeseall natural, whole milk and shredded
Recipe Notes
Directions:
- Slice chicken in medium size pieces
- Bread chicken in breadcrumbs. Coat in eggs, then dip in Italian breadcrumbs
- Heat oil and butter in pan
- Brown chicken in pan until browned, crispy and no pink inside
- Layer the eggplant bottom of crockpot
- Add 3/4 parmesan cheese and 1 1/4 cups of sauce
- Arrange chicken on the sauce, then add parmesan cheese, sauce
- Keep layering in same order: eggplant, parmesan cheese, sauce, chicken
- Top with Italian mozzarella sauce
- Cover and cook in crockpot on low 3 hours exactly
- Using quality Italian ingredients (can use organic also)
- Serve with angel hair or linguini if like
- Also, can serve with garlic bread and or salad
