Rosie Crafts Beef & Vegetable Soup

Recipe Notes
Ingredients:
1 Garlic Clove (crushed)
2 (14.5 oz.) Black Beans (or beans your choice)
4 Small Yellow Peppers (diced)
1 Medium Onion (diced)
3 Medium/Large Baking Potatoes (diced)
4 slices of Low Salt Bacon
1 ( 32 oz.) Low Sodium Beef Broth Carton
1 (14.5 oz.) Fire Roasted Tomatoes
1 (14.5 oz.) Diced Tomatoes with green chilis
1 tsp. pepper
1 tsp. oil
Rice (your choice enough for your family)
Directions:
- Brown bacon in pot, remove & drain
- Cut bacon in pieces
- Clean beef cubes & brown beef in fat from bacon, then remove
- Cut all veggies, dice and saute in the same pot
- Combine all the ingredients and add broth
- Simmer in pot until boils and everything is soft (except rice)
- If crockpot 4-6 hours on low (except rice)
- Cook rice according to package and have in the soup
