Ingredients
- 1cup Italian Breadcrumbsuse breadcrumbs as needed to cover each piece
- 1 Egg
- 1 Small Onionchopped in pieces
- 2lbs. Flounder Filet
- 110 oz. Frozen Spinachchopped, cooked, cooled and squeezed dry
- 1/4tsp. Pepper
- 5tbsp. Butterdivided
- 3tbsp. Flour
- 1/2cup Heavy Whipping Creamwhipping cream of your liking
Recipe Notes
Directions:
- Cook spinach until soft in pot
- After spinach is cooked, drain spinach in colander and get water out
- Bread flounder in one egg with Italian breadcrumbs
- Melt 2 tablespoons of butter in pan
- Add onion and saute
- Mix spinach and onion in bowl together
- Roll 1 1/2 tablespoons spinach mixture into each breaded flounder fillet and tuck
- Put fish fillet in baking dish after rolling them, make sure tight and stuffed fish are sandwiched next to each other.
- Melt 3 tablespoons of butter in a pot
- Add heavy whipping cream and 3 tablespoons of flour
- Keep stirring and mixing whipping cream and flour until bubbly
- Pour over the top of the stuffed flounder fillets
- Cover with foil and bake on 350 for 25 minutes
*Don't overcook the fish
