Rosie Crafts Crockpot Sausage & Peppers Lasagna

Ingredients

1 tbsp. oil

1 container (15 oz.) ricotta cheese

1/4 cup grated parmesan cheese, divided

1  ( 1 lb.) fresh spicy Italian sausage (castings removed) sausage of your choice

3 green peppers (sliced and diced)

1 1/4 cup chopped parsley

1 large egg (lightly beaten)

1 tsp. salt.

1 tsp.pepper

2 jars (24oz.) tomatoes basil sauce

1 box of ready to bake lasagna noodles

1 medium onion (sliced and diced)

3 cups  (12 oz) fresh Italian shredded mozzarella cheese ( or bagged fresh mozzarella cheese) divided

Directions:

  1. Mix ricotta, 2 cups mozzarella, 1/4 cup parmesan, parsley, egg, salt and pepper in medium bowl (set a side)
  2. Brown sausage in oil until browned and drain
  3. Add peppers and onion to the sausage (until all soft)
  4. Reserve 1 cup pasta
  5. Mix sauce and seasoning with sausage mixture
  6. Spread a little sauce bottom of crockpot
  7. Layer the lasagna noodles over sauce overlapping in longer direction
  8. Spread ricotta mixture over noodles
  9. Then, spread sausage mixture over ricotta mixture
  10. Top with shredded mozzarella cheese
  11. Keep layering in order: lasagna noodles, ricotta mixture, sausage mixture and top with fresh mozzarella

 * I add layers until mozzarella layer on top, so it’s melted layer of cheese
