Rosie Crafts Crockpot Sausage & Peppers Lasagna

Ingredients
1 tbsp. oil
1 container (15 oz.) ricotta cheese
1/4 cup grated parmesan cheese, divided
1 ( 1 lb.) fresh spicy Italian sausage (castings removed) sausage of your choice
3 green peppers (sliced and diced)
1 1/4 cup chopped parsley
1 large egg (lightly beaten)
1 tsp. salt.
1 tsp.pepper
2 jars (24oz.) tomatoes basil sauce
1 box of ready to bake lasagna noodles
1 medium onion (sliced and diced)
3 cups (12 oz) fresh Italian shredded mozzarella cheese ( or bagged fresh mozzarella cheese) divided
Directions:
- Mix ricotta, 2 cups mozzarella, 1/4 cup parmesan, parsley, egg, salt and pepper in medium bowl (set a side)
- Brown sausage in oil until browned and drain
- Add peppers and onion to the sausage (until all soft)
- Reserve 1 cup pasta
- Mix sauce and seasoning with sausage mixture
- Spread a little sauce bottom of crockpot
- Layer the lasagna noodles over sauce overlapping in longer direction
- Spread ricotta mixture over noodles
- Then, spread sausage mixture over ricotta mixture
- Top with shredded mozzarella cheese
- Keep layering in order: lasagna noodles, ricotta mixture, sausage mixture and top with fresh mozzarella
* I add layers until mozzarella layer on top, so it’s melted layer of cheese
