Ingredients:
2 cups Black Forest Cooked Ham (sliced and diced)
1 tsp. pepper
12 oz. Frozen Vegetable Mix (peas, carrots, corn mix)
1 Medium White Onion
1 pkg. 15 oz. Frozen Cheese Tortellini (cook according to package)
1 12 oz. can Diced Tomatoes with Seasoning
1 pkg. Mexican Shredded Cheese
Directions:
- Cut and dice ham and onion
- Saute in pot: ham, onion & diced tomatoes
- Grease 9 x 12 pan with oil
- Layer two large tortillas crossing each other
- Layer ham mixture: ham, onions & tomatoes
- Spread evenly cheese till covers ham mixture
- Layer two large tortillas crossing each other
- Layer ham mixture: ham, onions & tomatoes
- Then layer more cheese
- Layer two large tortillas crossing each other
- Top with shredded cheese
- Layer the layers to fill 9 x 12 dish
- Bake in oven covered with foil on 350 until cheese is melted (don’t burn)
*top layer can have tortillas or best is ending with top layer of cheese
