Rosie Crafts Chicken Enchiladas

Ingredients
- 1lb. Fresh Organic Chicken Cutlets
- 115.5 oz. Rotel Mild Diced Tomatoes with Chilies Peppers
- 1/2cup Tomato Sauce
- 7 Small Peppersorange, yellow and red bag mixture
- 1 Onionchopped and diced
- 1container Fresh Small Tomatoessliced and diced
- 1-2cups Shredded Mexican Cheese
- 1pkg. Large Burritos
- 215.5 Goya Black Beans
- 1cup Sweet Corn
- 1tbsp oil
Recipe Notes
Directions:
- Rinse chicken and cook on stove until no longer pink
- Cut up peppers, onions and tomatoes
- Remove chicken from pot once cooked and cut into small pieces
- Saute peppers and onions
- Add tomatoes, beans, corn and sauces
- Place chicken back in pot with vegetables, sauces and beans
- Cook until vegetables and beans until soften
- Oil 9x13 baking dish
- Place 3 large burritos across bottom overlapping
- Put chicken mixture on burritos, then layer cheese over chicken mixture
- Then 3 more burritos, chicken mixture and then cheese
- Bake in oven on 350 until cheese melts
- Also, I usually cook chicken on the stove and place all ingredients in crockpot on low for 4 hours and then I layer in the baking dish and layer with cheese and put in oven. If you have the time, using crockpot adds flavor to your recipes.
