Ingredients
- 1lb. Beef Cubesfresh, cooked and diced
- 3-4 Red Potatoes (medium)fresh, peeled, sliced, cooked
- 132 oz. Beef BrothLow Sodium
- 10-20 Small Plum Tomatoesfresh and sliced
- 110 oz. Rotel Diced Tomatoes with Chili Pepperscan
- 110oz. Fresh Bella Mushroomsfresh, sliced and diced
- 10-20 Baby Carrotsfresh, chopped up and cooked
- 2 Medium Onionsfresh, diced and cooked
- 1tbsp. Olive oil
- 1tsp. Pepper
Recipe Notes
Directions:
- Slice and diced vegetables
- Sauté carrots, onions and potatoes in olive oil
- Brown beef cubes, then cut in 1/2 halves
- Put broth, mushrooms (raw), diced tomatoes (raw) in crockpot
- Place sautéed potatoes, carrots, onions and cooked beef cubes in crockpot
- Sprinkle 1 tsp pepper and salt if which
- Cook in crockpot on low for 4 hours
*Dont overcook, you want the tomatoes and mushrooms soft.
