Ingredients
- 8slices Baconlow sodium (your choice)
- 3-4 Medium Potatoes (cut and peeled)potatoes (your choice)
- 1lb. Fresh Chicken Breastsskinless, boneless, trimmed fat, sliced and diced into cube size
- 1medium Sweet Onionskinned, sliced and diced into small pieces
- 1tsp. Pepper
- 1 Jalapeñosliced and diced into small pieces
- 1 1/2cups Heavy Whipping Creamsmall container in store
- 132 oz. Low Sodium Chicken Brothlow sodium (your choice)
- 1/3cup All Purpose Flour
- 1cup Mexican Cornfrozen, regular or canned corn (your choice)
- 112 oz. Frozen Peas and Carrotfrozen or canned (your choice)
Recipe Notes
Directions:
- In a pot, cook the eight slices of bacon and cook until browned and cooked well.
- Remove bacon from the stove, drain fat on a paper towel.
- Also, reserve 1 tablespoon of the oil drippings from bacon in the pot
- Place and cook raw chicken breasts in the pot with the leftover bacon drippings and cook until brown and no pink inside
- While chicken is cooking, slice and dice bacon, potatoes, onions and jalapeno
- Remove chicken from the stove
- Cook potatoes, onions and jalapeño in the pan with excess bacon drippings
- Put chicken, bacon and all vegetables and pepper in the pot
- Add chicken broth and then stir in cream and flour
- Simmer on low and cover on the stove for 10-15 minutes (until smooth, hot, creamy and all vegetables are tender)
- Don't overcook vegetables, can keep warm in a crockpot on low but, make sure doesn't brown
- I cook bacon, chicken and vegetables on the stove and place everything in the crockpot so, everything stays hot for mealtime
- If need more servings just add more vegetables
- Delicious with biscuits
